Radicchio. Sure, it can be a little bitter when raw, but when cooked and combined with the sweetness and saltiness of balsamic vinegar and bacon, it’s fantastic. Not to mention beautiful.

This attractive red vegetable has:

Historically, radicchio was used for insomnia. Now we know that this is because it contains intybin, which has a sedative and analgesic effect. This substance is also responsible for the bitter flavor of radicchio.

Balsamic Bacon Radicchio

Ingredients
- 3 strips bacon sugar-free
- 1 cup radicchio shredded
- 1 1/2 Tbsp balsamic vinegar
Instructions

Cook bacon in frying pan and take out before reaching desired done-ness.

Remove bacon from pan and dice into small pieces.

On medium heat, cook shredded radicchio in bacon fat until soft.

Add bacon and balsamic vinegar, stir, and remove from heat. Easy peasy, lemon squeezy!
