This dish is called “faux” shrimp ceviche because, unlike with traditional ceviche, the shrimp in this recipe is already cooked. So, if the idea of “cooking” your shrimp in citrus juices makes you nervous, you can still enjoy ceviche the way I’ve outlined it here.
This shrimp ceviche is a great addition to any barbecue or party where you want to make sure there is something healthy on hand. Even better, you can make it earlier in the day or even the night before so you can spend more time setting up the yard games, picking out party clothes, or getting some pre-party relaxation time.
You can make this faux shrimp ceviche using fresh, frozen, or even canned (but drained) shrimp. If you’re going to use large shrimp, chop them into small pieces. And if your shrimp isn’t already cooked, then just make that your first step.
To keep it healthy, serve this with your favorite vegetable “chip.” We suggest you try making these amazing beet chips.
