You might even find yourself indulging in them during the Challenge. Which, believe it or not, is okay. It’ll cost you a point, but it’s okay. It’s always up to you.
The world around you is not going to be different just because you did this Challenge. Temptations will still be there. You’ll still really like molten center chocolate cake. But when you’re done with the Challenge, you’ll know how to face hard choices and make the ones that leave you feeling fantastic.
We know that “healthy dessert” is kind of an oxymoron, but you’re not only going to discover amazing, actually-good-for-you desserts during this Challenge, you’ll learn how to enjoy your old favorites in a whole new way.
This whipped coconut cream is a WLC stand-by, and if you leave out the coconut crystals (it’s still good, we promise), this recipe will work for any Challenge level.
Whipped Coconut Cream
With this recipe, you can enjoy an old favorite in a healthier new way.
Ingredients
- 1 can coconut milk chilled
- 1 tbsp coconut crystals
- 1 tsp vanilla
Instructions

Combine coconut milk solids (be sure to avoid adding any of the water) with coconut crystals and vanilla in a large mixing bowl.

Whisk on high until the mixture becomes thick and creamy.

Use as topping on fruit of your choice (or layer into a healthy parfait).
