This is a great addition to your dinner, and more fun than your regular garden side salad. It’s simple, quick, and tasty. The rice and quinoa provide high amounts of the fiber, essential amino acids, and minerals your body needs to function optimally.

There are unlimited options to add into the salad to make it tasty and satisfying, so get creative. This recipe is good for one serving, so just multiply if you are serving more.

Ingredients

Salad Ingredients:

  • 1/2-2/3 cup already-cooked brown rice and quinoa blended together
  • 1 bunch butter lettuce chopped
  • 1 zucchini grated
  • 8-10 cherry tomatoes chopped

Lemon Garlic Dressing:

  • 1/3 cup olive oil
  • 3 tablespoons fresh lemon juice
  • 1 small clove garlic crushed
  • Salt and black pepper

Balsamic Dijon Vinaigrette:

  • 1/3 cup olive oil
  • 3 tablespoons balsamic vinegar
  • 2 teaspoons Dijon mustard

Instructions

  1. Mix all the salad ingredients in bowl.

  2. If you wanted to make this dinner, instead of a side salad, you could add chicken or hard-boiled eggs. This recipe is also a great way to use up any unused brown rice and quinoa you have in your fridge.

  3. To make the dressings, either whisk the ingredients together in a bowl or put them in an airtight container and shake (maybe do a little dance while you shake, too).
