As I always say, cooking for one is awesome because you can use more expensive ingredients and it won’t cost you a fortune. Eating shrimp always makes me feel pampered — although my wallet doesn’t necessarily enjoy it as much. But when you’re on your own, you can feel free to indulge!
To round out the flavors in this meal, I added chicken sausage, mushrooms, and wild rice. I always keep cooked rice on hand throughout the week so I can throw together quick meals like this shrimp, sausage, and mushroom wild rice dinner.
As written, this shrimp and sausage wild rice recipe makes two servings. So save the second one as another meal for yourself or share with a loved one. Either way, this dish is quick, simple, and tasty. Enjoy!
