Shrimp, Sausage, and Mushroom Wild Rice Dinner

As I always say, cooking for one is awesome because you can use more expensive ingredients and it won’t cost you a fortune. Eating shrimp always makes me feel pampered — although my wallet doesn’t necessarily enjoy it as much. But when you’re on your own, you can feel free to indulge!

To round out the flavors in this meal, I added chicken sausage, mushrooms, and wild rice. I always keep cooked rice on hand throughout the week so I can throw together quick meals like this shrimp, sausage, and mushroom wild rice dinner.

Shrimp, Sausage, and Mushroom Wild Rice Dinner

Ingredients

  • 1 chicken sausage chopped (be sure to check the sausage ingredients)
  • 1.5 cups frozen small shrimp
  • 1 cup mushrooms sliced
  • 1 tbsp butter or oil
  • 2 cups leftover brown or wild rice cooked
  • Salt and pepper to taste

Instructions

  1. In a medium-sized frying pan over medium heat, add the butter or oil.

  2. When the butter or oil is melted/hot, add the sliced mushrooms and cook until they are wilted, about 10 minutes.
  3. Add in the cooked rice, sausage, and frozen shrimp.
  4. Saute until all the ingredients are heated through and the shrimp is opaque.
  5. Season with salt and pepper and serve hot.
