At least once a year for the last six years, lobster tail has been on the menu in my house. Something about lobster makes me feel special. It is a meal that has always said, “Time to pay attention — exceptional food is now being served.”

As a kid, I grew up in a working-class family that did not have much. We struggled, but no matter what, once a year, our folks took us out to a special restaurant where we got dressed up and could order whatever we wanted. Almost every year, I ordered surf and turf. My yearly lobster fix started young and I have carried on the tradition.

Despite the luxury of this meal, cooking lobster tail could not be easier. Cleaning takes a few minutes and requires some intense handwork, but it’s nothing a small bit of effort doesn’t fix, and lobster is very simple to cook. This dish a great way to impress someone and spoil yourself, too!

First: How to Clean Lobster Tails

  1. Leave lobster in shell, and using kitchen shears cut up the middle and sides of the lobster on the non-shell side.
  2. Pull back thin covering that is now two parts and remove. This will leave the lobster meat exposed, resting in the pretty shell.
  3. Cut away any fins or pointed edges as desired.

Once you have cleaned the tails you can cook lobster several ways. Both grilling and cast iron cooking preparations are explained below.

Despite the luxury of this meal, cooking lobster tail could not be easier. This dish a great way to impress someone and spoil yourself, too!

Ingredients

  • 2 - 1 lb lobsters
  • 1/4 cup of ghee or grass-fed butter melted
  • 2 tablespoons fresh dill
  • 1 lemon
  • Salt and pepper to taste

Instructions

Preparation:

  1. Clean lobster and rinse thoroughly.
  2. Arrange on flat surface and squeeze 1/2 lemon onto each tail.
  3. Spread 1 tablespoon of melted butter or ghee on meat of each tail, followed by a sprinkling of dill, salt, and pepper.

Grilling:

  1. Pre-heat grill to medium temperature.
  2. Place lobster tail-side down to grill.
  3. Cook for 9-11 minutes and remove when done.

Cast Iron:

  1. Place 1 teaspoon of desired fat in cast iron pan, heating over medium heat to melt.
  2. Turn oven to broil.
  3. Once cast iron is heated, add tails to pan and place in the oven.
  4. Watching closely, cook for 7 -9 minutes under broiler.
  5. Removing Lobster from Shell:
  6. Once the lobster meat is cooked, grab the no-fin side of the tail, placing your fork between tail and meat.
  7. Pulling in the direction of the meat, you should be able to separate the meat from the shell without much of a problem.
  8. Use any remaining melted butter or ghee for dipping and enjoy!
