So often during life, we use travel as a reason for our diet and lifestyle to suffer from bad choices and improper self-care. But it doesn’t have to be that way.

I live my life on the road, basically moving every few days. This has been my reality for the last year and will continue to be for several more. This is because I believe so much in the power of diet and lifestyle to transform people’s daily experience that I have been taking my personal knowledge to the streets to share this journey with others.

As someone who has maintained a rigorous travel schedule and been able to maintain an uber-healthy lifestyle, I am telling you it can be done — and even with ease. Success lies in the desire to honor your body coupled with a willingness to plan ahead.

I often look for ways to eat delicious foods without the need to cook, but I get sick of the standard salad. I want easy, healthy, and delicious no matter my travel status. This apple walnut fennel salad is one of my favorites, and it seldom results in leftovers because it is so good.

Apple Walnut Fennel Salad

Ingredients

  • Organic apple of choice
  • 2 fennel bulbs
  • Fresh basil leaves
  • 1/4 cup whole walnuts
  • Olive oil
  • Pink Himalayan salt
  • Fresh ground pepper

Instructions

  1. Clean and slice fennel and apple fairly thin, stacking on a plate. A mandolin slicer works well for this.
  2. Add 1/4 cup walnuts to apples and fennel mounds.
  3. Drizzle with about 1/4 cup of olive oil, and add salt and pepper to taste.
  4. Garnish with fresh basil leaves left whole.
  5. Enjoy!

Recipe Notes

You can add in your protein of choice, as well. Chicken, fish, or your favorite vegetarian protein source would all work well with this salad.
