I’m seriously obsessed with beets right now. Which is kind of funny, because as I kid I wouldn’t touch them. Of course, my only experience with beets back then was the mushy ones that came out of a can.
As a grown up, I’ve discovered beets can be so much more. I love fresh beets, nicely grilled with salt and pepper — they’re simple, easy, and delicious. And they’re really good for you.
Beets are high in vitamins A and C, as well as magnesium, iron, phosphorous, and the list goes on. In fact, beet juice is now one of the go-to performance “secrets” of endurance athletes. They are amazing little roots. But that’s not why I eat them. I eat them because they are so yummy.
Here’s a new way I recently discovered to get my beet fix. It’s a beet slaw that can add a big antioxidant boost to any meal that you would historically serve with regular cabbage coleslaw. Plus, there’s none of the sugar, mayo, or dairy that often sneaks into traditional coleslaw recipes.
Sugar-Free Paleo Beet Slaw
This beet slaw contains none of the sugar, mayo, or dairy that often sneaks into traditional coleslaw recipes.
Ingredients
Dressing Ingredients:
- 1/4 cup good vinegar whatever kind you prefer
- 1/2 cup extra virgin olive oil or other quality oil
- 1 tbsp lime juice
- 1 tbsp brown mustard
- 1 tsp fish sauce Red Boat is our recommendation
- 1/2 tsp salt
- 1/8 tsp black pepper
Salad Ingredients:
- 3-4 medium beets about 12 oz by weight, peeled and julienned or shredded
- 1 medium tart apple Granny Smith or Braeburn are good, peeled and 1/2" chopped
- 2 green onions sliced, include the white and most of the green parts
- Black walnuts optional
Instructions

Whisk all the dressing ingredients together in the bowl you'll serve the salad in. If you have a small hand blender, so much the better. Taste and adjust the seasonings. It should be tart and stronger than you think it should be. Nobody likes wimpy slaw.

Throw in the beets, apple, and onions and stir together. Taste again and adjust the seasonings again in you like.

Top with walnuts (optional).
Recipe Notes
I buy my beets spiral sliced at the store in the produce section and chop them to size. If you start with whole beets, no worries. Use your Y-peeler just like you would for potatoes or carrots. Use it for the apple in this recipe.
