Baked Rosemary and Garlic Rutabaga Fries

Rutabaga is a gem of a root vegetable. It not only has a pleasant and slightly sweet flavor, but it also provides a plethora of nutritional benefits. The rutabaga looks similar to a turnip, but it is a bit more yellow in color and slightly bigger than a turnip.

Baked Rosemary and Garlic Rutabaga Fries

This veggie is so versatile and can be a welcome addition to any meal, but my favorite way to prepare them is to bake them into rutabaga fries. They are a flavorful and healthy alternative to white potato fries.

These rutabaga fries come together in just over thirty minutes and are perfect to serve as a snack or as an appetizer with your favorite dip.

Ingredients

  • 2 rutabaga
  • 2 tsp garlic minced
  • 1 Tbsp avocado oil
  • 1/2 tsp avocado oil in addition to the 1 Tbsp above
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 Tbsp fresh rosemary
  • 1 sprig fresh thyme for garnish

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Peel and slice rutabaga into matchsticks, approximately 1/2-inch thick, and place into a bowl.
  3. Add 1 tablespoon avocado oil, garlic, salt, pepper, and rosemary to the bowl and stir to coat.
  4. Line a baking sheet with aluminum foil, and spray or drizzle 1/2 teaspoon avocado oil onto the foil.
  5. Place the rutabaga fries onto the baking sheet.
  6. Bake for 15 minutes, remove the baking sheet to flip the fries, and then bake for an additional 15 minutes.
  7. Remove from oven and garnish with fresh thyme.
