Only a few years ago, I was one of the most sought after corporate team-building paleo chefs in Los Angeles. Funny that somehow every tech company was hiring me to host intense cooking classes that were like Top Chef meets Sesame Street.
Teams had to cook full meals under the pressure of a timer. Another challenge involved each team being given the ingredients for a course — but with no directions on what to do. They could use the ingredients to create whatever version of that course they could think of, but only using the ingredients they were given.

Fresh Herb Lollipop Lamb Chops

Ingredients
- 1 rack of lamb
- 5 stalks of fresh rosemary
- 5 stalks of fresh thyme
- 1 bulb of fresh garlic minced
- Pink Himalayan salt and fresh ground black pepper to taste
- Coconut oil or meat fat
Instructions

Chop lamb into individual lollipop chops.

Chop rosemary and thyme.

Mince garlic and mix together with rosemary and thyme.

Add salt and pepper to taste.

Place the mixture on one side of each chop, reserving half of the mixture for the other side.

Heat a cast iron pan with fat over medium heat until warm.

Add lamb chops with herb side down.

Cover top side with remaining herb mixture.

Cook for about 3 minutes on each side until medium done.

Remove from heat and enjoy.
