Antipasto is as much about the presentation as it is about the ingredients. Our Italian family always starts each holiday or big family meal with this amazing dish and there are never any leftovers. Many times this appetizer is the most colorful recipe of the day.
The great thing about antipasto (for us busy people) is that you can make it earlier in the day and cut down on the pre-dinner chaos. This can be a great boon for you during busy holiday party or celebratory get-together times. In fact, making this dish ahead of time enables all the flavors to join forces for an explosion of deliciousness in your mouth.

Grandpop’s Antipasti
Our Italian family always starts each holiday or big family meal with this amazing dish and there are never any leftovers.
Ingredients
- Organic extra virgin olive oil
- 1 lb uncured nitrate- and sugar-free assorted hams and salami
- 3 cups of assorted organic lettuce
- 1 jar of roasted peppers marinated in extra virgin olive oil with no additional ingredients
- 1 jar of artichoke hearts marinated in extra virgin olive oil with no additional ingredients
- 1 pint cherry tomatoes halved
- Aged balsamic vinegar
- Pink Himalayan sea salt
- Fresh ground pepper
Instructions

Roll ham and salami, place along the bottom of your serving dish, alternating, to cover dish.

Add washed and torn lettuces on top.

Add peppers and artichoke hearts with some of the olive oil.

Add cherry tomatoes.

Pour extra virgin olive oil over everything followed by a balsamic drizzle.

Cover and refrigerate until ready to serve. Can be made 3 hours ahead to allow flavors to meld.
