For those of us in Australia, this chicken quinoa salad is a fabulous summer dinner option – and if you’re on the flip-side of the planet, it can also be a wonderful way to add color to your winter nutrition. The zest from the orange is refreshing and gives it a lovely flavor. The quinoa makes the salad more filling. And nutrient-wise, this is a perfect meal for after a workout.
I used minimal ingredients, but you really can get creative and add in as many alternative vegetables as you would like and/or even change the fruit to mango and add some pistachios. I used the latter to make a salad for Christmas and it was a hit.
Orange Chicken Quinoa Salad
The quinoa makes this salad filling and nutritious.N utrient-wise, this is a perfect meal for after a workout.
Ingredients
- 1 cup quinoa
- 4 ounces shredded chicken
- 1 orange peeled and sliced
- 2 handfuls spinach
- 8 cherry tomatoes
- 1 serving baked squash or sweet potato cubed (optional)
- Lemon juice and olive oil to taste (optional)
Instructions

Cook quinoa either on the stove or in microwave according to package instructions.

Once quinoa is cooked and dried, then add all ingredients to a large bowl.

For post-workout, add in a dollop of baked squash or sweet potato.

Stir well and dish to serve.

Dress with a little lemon juice and olive oil, if you like.
