Ingredients
Salad Ingredients:
- 1/2-2/3 cup already-cooked brown rice and quinoa blended together
- 1 bunch butter lettuce chopped
- 1 zucchini grated
- 8-10 cherry tomatoes chopped
Lemon Garlic Dressing:
- 1/3 cup olive oil
- 3 tablespoons fresh lemon juice
- 1 small clove garlic crushed
- Salt and black pepper
Balsamic Dijon Vinaigrette:
- 1/3 cup olive oil
- 3 tablespoons balsamic vinegar
- 2 teaspoons Dijon mustard
