You can use any kind of greens for this recipe. I like "dino" greens because they are especially easy to clean and cut.
Heat fat over a medium heat in a large, 6-quart pot. You want some room to move the kale around.
After 5 minutes, uncover it and cook until most of any remaining liquid has evaporated.
